Tasting notes
85% Northern Spy apples and 15% Malvasia Bianca. A winemaker’s cider, made in the tradition of Italian ripasso and the piquette revival, fermenting fresh apple juice on grape pomace that was otherwise headed for the compost heap. Golden apple and ripe bosc pear meet delicate tropical fruit and star thistle honey, while the grape skins add tartaric acid apples do not have, giving tannin and crisp texture. The name comes from the whimsical creatures monks doodled in the margins of manuscripts, which is roughly how Mari thinks about its work with apples.
