Tasting notes
Their second edition of Maple Wine, made entirely from sugar maple trees on Old Mission Peninsula, and named essence of the tree in Italian. Deep notes of maple, vanilla and caramel layered with brighter pear and apple. Barrel-aged character and soft acidity create a delicate, balanced complexity. Dessert in a glass, and the intensity and high residual sugar will let it age a long time in bottle.
