Tasting notes
Harvested on 19 September 2023 at 3.26 pH and 19.7 Brix. That high-acid, lower-sugar chemistry is what suits the concrete egg for both fermentation and aging: concrete allows the absolute purity of the fruit through without adding or altering flavour the way new toasted oak would. Pressed and settled in stainless for 24 hours before racking to the egg. No additives, acid or sugar adjustments, enzymes or sulfur at crush, and a long, cool spontaneous fermentation on indigenous yeast.
