Tasting notes
A pét-nat made from their estate Tannat, bottle-fermented in the ultra-brut style, the driest of the dry. The primary fermentation is watched closely because the wine is bottled near the end of it, at 12 to 16 g/L of sugar. That remaining sugar finishes fermenting inside the bottle and carbonates the wine naturally. This is the ancestral method, and it is where the term pétillant naturel comes from.
