John Dyson, a Millbrook native, developed an appreciation for wine at Cornell's College of Agriculture. Never keen on beer, he bought a jug of wine to impress a date, then enrolled in a wine course at Cornell's hotel school, and the interest stuck.
In 1982, after successful vinifera plantings on his father's farm, Dyson bought the 130-acre Wing Dairy Farm and co-founded Millbrook with his brother-in-law David Bova. The first vines went in the following year; the gravelly soil on southwest-facing slopes proved excellent. Millbrook was the first vineyard in the Hudson River Region dedicated exclusively to vinifera. John Graziano joined as master winemaker in 1984.
The winery opened for tours and tastings in 1998 and now makes between ten and fifteen thousand cases a year, across Cabernet Franc, Chardonnay, Pinot Noir, Riesling and Tocai Friulano. Tastings are held in the restored Dutch barn.
